‘Pickled’ Green Mango

Its been a little while since I have posted a recipe. Here is a really easy one that takes me back to the days of living in Honduras. It’s mango season here in Florida, so if you can find a mango that is still green, or you accidentally bought a green mango by mistake, here’s a way to enjoy it before it ripens.

Ingredients

1 Peeled & Diced Green Mango (long strips or tiny chunks)
Apple Cider Vinegar
Salt & Pepper (to your taste)

Optional
Hot Sauce
Garlic Powder

Instructions

Place your diced mango into a glass jar. Sometimes I use one large jar and one small jar, depending on the amount of mango you have. I usually cram as much as I can into a jar. Sprinkle in the salt and pepper. I prefer to coarse sea salt. If I have two jars, I add hot sauce to the smaller jar. You can also add garlic powder if you’d like to one or both or none. Then pour the apple cider vinegar until it covers all of the mango slices. Cover with a tight lid, and shake up the mixture over a sink. Refrigerate and eat whenever you want. Sometimes I start munching on the mango right away, and sometimes I let them sit for a few days. It tastes great added to tacos, salads, white rice, or nibbled on its own.
